happy fri! i’m thinking about crossing swimming off my summer bucket list this wknd. wbu?
in the meantime, i’ve been eating an herb salad all wk and it’s so good i can’t stop thinking about it. here’s how you make it:
procure a lemon, feta, slivered almonds, and 3 of your fav herbs — i used parsley, tarragon, and dill. wash and dry the herbs, then pick the leaves off. this step took less time than i thought it would.
make a dressing with half a lemon, a bit of olive oil, and a spoonful of nice mustard. crumble the feta, add in the almonds, mix it all together.
